Update README (#642 / #644)

Steve Moyer has been removed from the maintainer section in the
README and from the developers section in `build.gradle.kts`. This
commit also fixes the lexicographic order of contributors and adds a
paragraph about our optional dependencies.

* Equalsverifier (for easier assertion of simple things)
