Pydantic accidentally introduced a breaking change in 1.9.1 with the change to how
copy_on_model_validation
works. Bump minimum version to 1.9.2 to make sure no-one gets hit by this.Some discussion here: #89 (comment)

Additionally, since #91 was merged, the
requirements.dev.txt
file is now redundant, and so is removed and two workflows which used it for a cache key updated.
