Update Meeting Time

Before merging - do we want to pin this to the daylight savings cycle of Europe (as most maintainers are based there)?

Not urgent to decide right now but winter will come ;)

I think cest would be a good idea, so we don't have to change our schedule when winter comes. I still have to remind myself that the current meeting is 14:30 cet 😆
