Refine the pitch-to-seek UX

Add a fixed quick-tap offset to be able to jump back exactly the same amount (more predictable, e.g. when practicing a bit of a song on repeat).
Add a function to hold the wheel at maximum bend to seek continuously at quite a fast speed.
