Disable sorting but keep current sort? v data table

Hey.
Here is my problem :
I have a v data table with lot of inputs, so the user can the change the value... which can be sorted.
But if the user sort the column, he can not change the value of the field, because the sorting update immediatly.
This is completly normal, but not great for UX...

Any Idea how can I improve this?
