Dynamic build config path

Hello @weaverryan,

I have this theme system, and would like to add a build based on the theme name with the path, is it possible to configure the build dynamically without adding it in the webpack_encore.yml configuration? That is, the same thing you do with the packages.

I have been doing some research and I have seen that all the configuration is inside the container, do you know how I could modify this?
