Docs: opt-in into the new beta addons and update .readthedocs.yaml

We are doing some black magic to use the current script in our own documentation. However, in the next release of Read the Docs we will be allowing users to opt-in directly on this. We need to update our documentation build steps and use the standard pattern here.
