Complete the "running relayer" documentation with configuration for the Polkadot<>Kusama bridge #2851

The relayer documentation is currently missing the configuration for running the P<>K bridge (see running-relayer.md#starting-your-polkadot--kusama-relayer)

We will update docs for Polkadot <> Kusama relayers once we'll switch to that 6 standalone relayers scheme there. Until that, let's not do that
