As per #1135 (comment), the Conflict of Interest policy mentioned in the CoC isn't very detailed (to put it mildly).

As we've been living with this policy forever, we shouldn't block #1135 over it. We can work on it in parallel however, and merge in #1135 if we get consensus here before #1135 is merged.

Posting this here as a resource - interesting examples of how other Non Profits frame conflict of interest. The comments on 'conflict of loyalties' are interesting and could be useful for framing potential personal conflicts related to CoC escalations.
