Output matched files in the build log when using [functions] include_files="files/*"

Which problem is this feature request solving?

When using include_files it would be really helpful to see how many files we are matching at build time. Currently, there is no output.

Describe the solution you'd like

To avoid the situation where we output literally hundreds of file matches line by line, we could output a limited example subset and a total count. This probably shouldn't persist if we enable CI builds with the CI environment variable.
