Define better default values (color and thicknes) for the highlight setting

As discussed (#6747 (comment)) seems like the current default values for the highlight setting (color and thicknes) could be improved. Seems like the idea would be to have a default color that works with the dark and ligh themes and a default thicknes value that works with high and low DPI screens
