cranberry nut bread

Ingredients

  • 2 cups (250g) flour
  • 7/8 cup (175g) sugar
  • 1-1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup orange juice (from ~3 oranges)
  • 2 tablespoons oil
  • 1 tablespoon orange zest
  • 1 egg, beaten
  • 1-1/2 cups (170g; 6oz) cranberries, fresh or frozen, coarsely chopped (into fourths is good)
  • 1/2 cup chopped nuts (optional)

Directions

  • Preheat oven to 350°F. Grease and flour a 9x5 inch loaf pan.

  • Combine flour, sugar, baking powder, salt, and baking soda in a medium bowl. Combine orange juice, oil, orange zest, and egg in another bowl. Stir wet mixture into the dry until just combined (don't overmix). Fold in the cranberries (and nuts if using).

  • Spread evenly in the loaf pan. Bake for 50-55 minutes. Test with toothpick. Cool on wire rack.

Adapted from the recipe that used to be on the Ocean Spray cranberry package

Could probably use more oil, to make this more moist. Taste should be fine, since there is a lot of tartness in this.
