I was having trouble converting some notebooks and was getting an error of xelatex not being able to find the files output from Jupyter.
After (too many hours of) testing I discovered that my notebook name had two adjacent spaces in the title and by removing this extra space made nbconvert work.
I am on MacOS.
I enabled debug and it looked like this issue is to do with the folder where the output images are put not being able to be created as it was being created when saving each image.
