Ref. #277 which introduced pinned version for addons.

As per https://registry.terraform.io/providers/hashicorp/aws/latest/docs/resources/eks_addon#argument-reference, the available versions for a given addon can be retrieved with the command line aws eks describe-addon-versions <...>/
