Support for alternative shimv2 runtimes needs documentation

Problem description

MVP support for alternative shimv2 runtimes has been available since Moby v23.0.0, but is not yet documented outside of the changelog.

• [22.06 backport] daemon: support other containerd runtimes (MVP) moby/moby#43887
• [22.06] Allow containerd shim refs in default-runtime moby/moby#43993

Additionally, support for configuring named shimv2 runtimes, available in the upcoming Moby v24.0.0 release, also needs documentation.

• daemon: allow shimv2 runtimes to be configured moby/moby#45032

Document for v23.0

Beta Give feedback

1. docker run --runtime accepts fully-qualified shim names, a.k.a. containerd runtime types (e.g. io.containerd.kata.v2, io.containerd.runsc.v1)
2. dockerd --default-runtime accepts fully-qualified containerd runtime types

Document for v24.0

1. The "runtimes" key in daemon.json accepts containerd runtime types and options
