[Meta] Dependabot updates should request review from maintainers team

Describe the feature

ex. https://github.com/cryostatio/cryostat/blob/main/.github/dependabot.yml but similar across other projects.

Currently Dependabot requests review from @cryostatio/reviewers, but this should instead be @cryostatio/maintainers since there is now a distinction between the two.

Anything other information?

Hey @aali309, would you want to repeat the same process in cryostatio/cryostat3#121 for other repos? Right now, only cryostat and cryostat3 has this updates, I believe.

I think there are a couple more spots to update still:

• jfr-datasource
• cryostat-reports
• cryostat-grafana-dashboard

Some of these might already be configured to do the right thing, I haven't checked. I just don't see them linked to this issue (yet).
