revisit graphql 16 upgrade

There should be a gatsby release soon which is compatible with graphql 16
That may or may not allow us to remove skipLibCheck - can't remember 😄

Of course, we can't immediately upgrade to it once it comes along. We're currently on 4.23.1 and 4.24 introduces a new exciting peerDependency conflict for us, so we need to get into that. It should remove the blocker to getting on to graphql 16 though. So that's nice :)

Worth retrying this now gatsby is out of the equation
