What would you like to be added:
I'd like to have a compose or docker workflow for developing locally.

Why is this needed:
Syftis supported on Linux and Mac, but has no containerized development environment to support easy local dev or developing on a Windows machine

Additional context:
This is mirror an issue in Grype anchore/grype#782
