Is your feature request related to a problem? Please describe.
AFAIK there is no way to render LaTeX with {itemize}, e.g.
\begin{itemize}
\item List entries start with the \verb|\item| command.
\item Individual entries are indicated with a black dot, a so-called bullet.
\item The text in the entries may be of any length.
\end{itemize}

A simple way to do this

Link to or name of a (La)TeX package that provides the same feature:
Overleaf does this, not sure what you meant here

Katex is math typesetting. It provides a math environment using the dollar character like LaTeX, or at least major functionalities of it. It is not meant for parsing LaTeX.
