We should document how to use this repo better:

short (e.g. 5 line) example usage
links to kustomize docs
How to hook up to grafana
- how to add loki data source
- how to hook up the dashboards
Call out that this repo doesn't have a loki-in-monolithic setup; why you might want one instead; and where to find it
